French Su Di Imperial Champagne 2009, 750ml, 12.5% vol
►Introduction: Chuan Di Winery is located in the Ambonnay village, a Grand Cru Village in the Champagne region of France, where top-tier champagnes are produced. The winery has been producing champagne with great dedication for generations since 1936. Approximately three years of aging is more than twice the required 15 months stipulated for non-vintage champagnes. Only small-scale vineyards that protect their terroir, emphasize manual techniques, and break free from standardization can achieve such excellence, resulting in outstanding champagnes.
►Comment: 100% Pinot Noir was produced using the maceration method (instead of traditional red-and-white grape blending), where the grape skins and juice are left to ferment for 2–3 days, naturally staining the juice red and giving it a fruity red flavor. The deep red body shines with purple undertones. The aroma features sweet flavors of raspberry, blackberry, and blackcurrant. The taste is fruity, lively, and slightly sour.
►Server recommendation: Drinking champagne is a comfortable and elegant activity on the palate. Ignore the strong wind and light snow outside; your mouth is enveloped by dense champagne bubbles and the aroma of fruit, flower, and yeast. One person picks up a flute glass, either to enjoy quietly, pair with food, or engage in lively drinking. Once you drink a glass, the festive atmosphere is created.
►Tasting: Recommended drinking temperature is 6~8 °C
