Why does smoke-free Pan still produce lampblack during use? How do you deal?

First of all, we need to understand that the critical temperature of cooking oil cracking/evaporation is 240 °. At this oil temperature, no lampblack will be generated, and the food will be more nutritious and delicious. When the oil has oil lines, is the oil temperature.
Lampblack is related to the oil temperature. If you choose fire, the high oil temperature will still produce lampblack, and the super high temperature will lose the nutrition of food. Please adjust the fire power. Due to the uniform heat transfer of smoke-free pan, it is recommended to use medium and small fire when using, instead of dry burning.

Why is medium or small fire the best choice when cooking with non-stick pan?
