Usage Method:

Whipping the egg whites

 

Whisk the egg whites with an electric whisk, usually for ten minutes.

 

1. Fresh eggs are preferred. Fresh eggs have thick albumen that is easy to beat.

 

2. The white and yolk of the egg should be separated completely, without any trace of yolk, or it will be difficult to beat. If you are not sure, it is best to first separate the egg white into a small bowl, and then pour it into a dry, oil-free stainless steel large bowl. Egg whites account for about 58% of the egg, yolks account for 31%, and the shell accounts for 11%.

 

3. Set the mixer to low speed (the first gear), and beat for about 20 seconds. The egg white liquid will produce many large bubbles. This step is very important. 4. Set the mixer to high speed (the third gear), hold the large bowl with your left hand slightly tilted, and let the beater "sink" deeper into the liquid. The egg white will be wrapped around the beater, and beat for 2 to 3 minutes.

If you make a meringue cake at this time, you can add cream of tartar and powdered sugar, and then continue to beat for about 3 minutes. The volume of the egg white will expand by more than 5 times. The traces left by the beater become increasingly clear.

Gently lift the beater when beating the egg whites, and you will see a small peak, indicating that the egg whites have been largely beaten. There are two types of egg white beating: wet beating and dry beating. The difference lies only in the length of time for stirring.

 

Whipping cream

Whipping cream needs to be stirred with the beater for 5 - 8 minutes before use. Start with a medium speed for the first 10 to 20 seconds to promote even distribution and prevent splattering. Once the cream is slightly thickened, switch to a higher speed to continue stirring until the cream reaches a 4-fold whipped state, which is more viscous. Then, switch to the third gear and stir back and forth to fully whip the cream into a solid form.
