Question: Why does stainless steel knife and scissors have magnetism?
Answer: To make stainless steel knives and scissors, one should use martensitic stainless steel. Since knives and scissors have the function of cutting items, they must have sharpness, and sharpness requires a certain hardness. This type of stainless steel must undergo heat treatment to cause a transformation in its internal structure, increasing the hardness before it can be used to make knives and scissors. However, the internal structure of this type of stainless steel is tempered martensite, which is magnetic and can be attracted by a magnet. Austentitic stainless steel is non-magnetic, but this type of stainless steel cannot be heat treated to obtain higher strength, as it lacks strength, it cannot be used for knife bodies. It is applied to other purposes such as cooking utensils. Stainless steel determines whether it is magnetic based on its different uses, so it cannot simply be determined whether it is stainless steel by its magnetic properties.
Question: Sometimes after using the knife, there are yellow spots?
Answer: Stainless steel is less prone to rusting due to the addition of more than 12% chromium in its matrix. In oxidizing corrosion media, chromium allows for the rapid formation of a dense passivation film on the steel surface, preventing the destruction of the metal matrix. When the chromium content is over 12%, a dense and stable passivation film is formed, leading to a leap in anti-rust performance, significantly enhancing the corrosion resistance. This is why the chromium content in stainless steel needs to be over 12%.
Stainless steel, as the name suggests, is steel that does not rust. The term "non-rusting" is relative; it does not mean that stainless steel is completely rust-proof. It is merely less susceptible to corrosion and rusting compared to carbon steel under the same conditions and environments.
To prevent rust on stainless steel knives and scissors, it is mainly about not damaging the passive film on the surface of the stainless steel knives and scissors. After use, clean it as soon as possible and dry it. Try to avoid contact with acid, alkali, and salt-based items. After each use, the knife needs to be cleaned, dried, and coated with cooked cooking oil. It should be placed in a well-ventilated and dry place, away from water sources and gas stoves, to prevent rust. If yellow spots appear, they can be cleaned with stainless steel-specific cleaning agents or general toothpaste, and then dried after washing with water.
